We're so excited about the newest addition to our Jacuzzi portfolio! Malvasia is an extremely aromatic variety with notes of exotic fruits, lychee, pineapple, and melon intertwined with white flowers and pear. A dash of wet stone and almost a hint of baking spice adds depth to the wine.
The grapes are sourced from Lodi in the middle of the central valley. This well-known region produces a warm climate to ripen difficult grapes, and Malvasia needs a lot of heat to ripen evenly. The vineyard where these grapes come from is planted in San Joaquin Loam soils that have washed down from the Sierra Nevada mountain range over millennia. This moderately well-drained soil has a solid clay, rocklike layer. The available water-holding capacity is low, and roots must find their way through the cracks in the clay layer. The naturally low to moderate fertility controls vigor and keeps the vines small, producing grapes with an excellent concentration of flavors.
The grapes were handpicked just before dawn and transported to the winery, where we whole cluster pressed them into a stainless steel tank. We allowed the solids to settle for two days before racking and inoculating with a cold, slow fermenting yeast that adds richness and complexity to wines. We fermented this wine at 50F, very cold and fermentation took over three weeks to complete. From there, it was transferred to neutral French oak barrels for three months before bottling.
