The 2020 Dolcetto comes from a vineyard in San Antonio Valley AVA, tucked in behind the Santa Lucia Mountains, just south of Salinas in Monterey County. The area has one of the longest grape growing traditions in the present-day United States, when the Mission San Antonio de Padua was established in 1771 with a small vineyard, in Spanish colonial Las Californias. Ideal for growing warm-climate varieties, we pick this Dolcetto early to retain acidity and fresh fruit.
We made this wine in a fresher, younger driven style by harvesting earlier to keep bright primary fruit flavors. The grapes are hand-picked at night and delivered to Jacuzzi Winery first thing in the morning where we gently destemmed and transfer them to a stainless steel tank. It is allowed to naturally start fermenting but the temperature is kept low at 75F max and pressed early at 10 Brix to retain fresh flavor and picking up minimum tannin. From there it is allowed to complete primary fermentation in the tank before being racked and sulfured to neutral french barrels where it is stored for three months before bottling.
