This beautiful wine looks stunning in the glass and is fantastic to drink. Bright fruit aromas jump out of the glass and lead to a nice subtle yeasty complexity includes nuttiness and freshly baked bread. The acidity is lively, yet the finish is smooth and long.
This wine is a blend of our Sonoma Coast Estate Vineyards. The majority comes from the 5 Sisters Ranch in Carneros and the rest from Catapult Vineyard in the Petaluma Gap. 5 Sisters Vineyard has Nebbiolo and Barbera with the Catapult Vineyard supplying about a third of blend and being Nebbiolo. The fruit is picked early in the season for making wine in the Methode Traditional way but with our grown Italian varieties.
The grapes were hand-harvested first thing in the morning and then pressed immediately together, receiving minimal skin contact achieving a bright rose color. The juice is cold settled and then racked to a stainless-steel fermentor, where it ferments at a cool 55°F to retain the bright, fresh flavors of the grapes. Wine is fermented dry without undergoing malolactic fermentation. This "cuvée" is then moved to individual (Methode Champenois) bottles where a small amount of sugar and yeast is added. The wine then ferments in the bottle, and the natural CO2 created is captured in the bottle. The wine is aged sur-lie for 12 months before being riddled and disgorged for release.
