Our Sangiovese Riserva is sourced from our best vineyard within the Petaluma Gap, Catapult Ranch. The block is at the bottom of the Westward facing slope, only slightly sheltered from all the fog and wind that sweeps through this area. Rich but shallow clay loam soils dominate here but allow for ample vigor. This is a cold spot for Sangiovese and is normally the last pick of the season, allowing full flavor development at low sugar levels. We thin this block to achieve optimum concentration and also position bunches and shoot for perfect uniformity. 2019 was a mild to warm year and yet we still picked this at the end of October.
This block is hand-picked before dawn and bought to the winery where it is destemmed directly into open-top fermenters. We cold soak for three days before warming up to begin fermentation naturally. It is punched down 2-3 times a day with a peak fermentation temperature of 83F before pressing at dryness after 14 days total on skins. We innoculate with our house strain of ML bacteria and barrel down to 45% new French oak, a mix of coopers to highlight the intense fruit. It is aged for 18 months in barrel before blending and bottling.
