Our 2019 Dolcetto is made in a light, easy-drinking style that showcases it's beautiful raspberry and lilac notes.
Our Dolcetto comes from Split Rock Ranch which is Southwest of Ukiah in Mendocino County. The vineyard is planted in an old river bed with well drained, nutrient rich soils. Here, the hot days lend to slowly ripening Italian varietals whilst the cool nights keep the flavors fresh and the acidity bright.
We made this wine in a fresher, younger driven style by harvesting at 23 Brix to keep bright primary fruit flavors. The grapes were brought to the winery and destemmed into a closed top tank. Fermentation began naturally and the juice was briefly pumped over twice a day. Once fermentation was halfway complete we pressed off the skins. This preserved the primary fruit and flavor, and stopped the extraction of tannin, making the wine fresh and lively. From there fermentation was completed in neutral French oak barrels. The wine underwent partial malolactic fermentation and was bottled early in January, making it bright and lively with low tannin.
