This blend is our homage to Super Tuscan wines. With a solid core of blackberry, plum, a touch of cranberry and boysenberry along with overtones of dried herbs, green olive, and cedar this wine has wonderful complexity and elegance.
The 2018 growing season was a challenging one. We had late budburst and a very mild to cool summer. A decent crop was on the vines and we barely had adequate sunshine to ripen all our fruit, a very European Summer indeed. The first week of October saw heavy rains that the fruit came through unscathed. Our fruit comes from our Estate Carneros Ranch at the bottom of Sonoma Valley on an East facing slope on the western side of Carneros. Great for early morning sunshine and controlling disease pressure although we lose the sun a little early in the afternoon meaning long hang-time and great flavor development. In this blend we have 62% Cabernet Sauvignon, 16% Sangiovese, 10% Malbec, 6% Cabernet Franc, 4% Merlot and 1% Petit Verdot. A true Super Tuscan blend consisting of the 5 Bordeaux varieties along with Sangiovese, the king of Tuscany. Picked on the 3rd of November at the very end of the season it benefited from long ripening and true detail and showcases the stunning climate and site in Carneros.
Picked at 24.7brix at first light we bring it to the winery and destemmed and must pumped together to a closed top tank to extract all of the flavor and tannin from the wine. It was allowed to begin fermentation naturally and was pumped over three times a day at the beginning of ferment before being reduced to once a day to allow the wine to evolve on skins. It spent 16 days on skins before being pressed and transferred to barrels. It spent 2 years in barrels with 40% French M+ oak to slowly age and soften in barrel before bottling.
