Our BRAND NEW release of 2020 Malvasia!
We're so excited about the newest addition to our Jacuzzi portfolio! Malvasia is an extremely aromatic variety with notes of exotic fruits, lychee, pineapple, and melon intertwined with white flowers and pear. A dash of wet stone and almost a hint of baking spice adds depth to the wine.
The grapes for this Malvasia are sourced from Paso Robles Highlands District to the South-West of Paso Robles. Not a well known AVA, but an AVA that has the highest diurnal shift of any AVA in the USA, allowing the grapes to ripen evenly whilst retaining beautiful acidity and fresh flavor. A hot region overall, the French Camp vineyard where these grapes come from are planted in broken down alluvial soils that have become cemented and very hardy, making it difficult for vines to establish themselves but once they do they can flourish on the lower subsoils of iron-rich clay which naturally controls yield, allowing for concentrated grapes and flavors.
The Malvasia grapes were hand-picked just before dawn and transported to the winery where we whole cluster pressed them into a stainless steel tank. We allowed the solids to settle out for two days before racking and inoculating with a cold, slow fermenting yeast that adds richness and complexity to wines. We fermented this wine at 50F, very cold and fermentation took over three weeks to complete. From there it was transferred to neutral French oak barrels for three months before bottling.
