This stunning Sparkling Brut Rose is made with Italian varieties in the “Methode Traditionnelle” way. The wine has brilliant acidity and vibrant flavors of red berries, watermelon and raspberry compote with richness and complexity. The finish is long, fresh and lively.
This Sparkling Rosé is made from estate grown grapes from our “5 Sisters Vineyard” in Carneros and our “Catapult Ranch Vineyard” in the Petaluma Gap. Both vineyards lie within the Sonoma Coast AVA and farmed using the Green String Method.
Grapes were hand harvested first thing in the morning and pressed immediately together allowing minimal skin contact to achieve a bright rosé color. The juice was cold-settled and racked to a stainless-steel fermentor where it fermented at a cool 55°F to retain the bright fresh flavors of the grapes. The wine was fermented until dry without undergoing malolactic fermentation. This "cuvée" was then moved to individual (Methode Champenois) bottles where a small amount of sugar and yeast were added. The wine then fermented in the bottle to capture the natural CO2 that is created. The wine was aged “sur-lie” for 10 months before being riddled and disgorged for release.
