Our Late Harvest Aleatico is an explosion of plums, strawberry jam, and vibrant berries with notes of licorice and rhubarb pie. The high alcohol makes for a very weighty wine and the high natural sugar is well-balanced against the grape acid and subtle tannin.
Our Aleatico grapes come from the rich soils of the Serres Ranch located in the heart of Sonoma Valley. Vineyard owner John Serres allows the grapes to be slightly shaded because he has learned that it brings out the floral character.
Grapes were carefully handpicked and sorted in the vineyard to ensure clean, ripe fruit arrived at the winery early in the morning. We gently destemmed the clusters and transferred the whole berries to a temperature controlled tank for fermentation. Fermentation started naturally without the addition of yeast. After two weeks the wine was pressed gently off the skins. Fermentation continued for another 6 weeks until the wine found its natural balance between alcohol and sugar. Then it was transferred to neutral French oak barrels for 12 months of aging before bottling.
