Spaghetti with Mushroom Marinara

Servings: 4-6 people


  • ½ cup Extra virgin olive oil
  • 1 yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 6 medium tomatoes diced
  • 2 cups mushrooms (sliced)
  • 2 cans diced tomatoes
  • 1 cup red wine
  • Salt and Pepper
  • 1 lb of spaghetti


  • In a large soup pot over medium heat, add olive oil, garlic, and onions. Cook until soft, about 7 minutes
  • Add diced tomatoes along with 2 cans of additional diced tomatoes bring to a boil and stir occasionally for about 15 minutes
  • Add 1 cup of red wine and salt and pepper to taste
  • Add sliced mushrooms to pot and continue cooking for another 20 minutes
  • Fill another pot with water and bring to a boil. Once boiling add spaghetti and cook until al-dente (9-11 minutes). Drain to serving dish.
  • Add mushroom marinara sauce to spaghetti, mix, and serve
