Suggest Wine Pairing: Montepulciano
Saute onions in EVOO for about three minutes or until
brown. Add pine nuts, raisins, capers,
and olives. Cook to mix flavors. Add potato to pan together with crushed red
pepper and salt. After about five
minutes, add water to cover and bring to a simmer. Add tomato puree and cook until potatoes are
almost fully cooked. Lay cod on top of
mixture and cook without a cover for about five minutes. Spoon sauce over the fish from time to time
to give it a little color.
