These Friulano grapes were planted in the southern hills of Sonoma, Carneros. Vineyards are wind swept and subjected to the region’s moderate and cool temperatures. With winds coming from the Pacific Ocean and San Pablo bay the grapes ripen slowly and to perfection.
Grapes were handpicked, de-stemmed without being crushed and immediately pumped to our tank press where the juice was gently squeezed from the berries. Juice was pumped to a stainless steel fermentation tank where the wine was chilled and settled for two days. The juice was then racked (decanted) off the grape solids and inoculated with a pure strain of wine yeast. Fermentation proceeded at a cool 50 degrees F. The wine was kept in temperature controlled stainless tanks throughout fermentation then it was pumped to “neutral” oak cooperage so no oak flavors were extracted.
This wine offers a nicely balanced acidity, heightened pineapple and lemon flavors and a long, clean finish.
Pair with grilled shrimp or clams over linguine.
